Some places in Bali, especially on the beach such as villages of Kedonganan, Jimbaran, Kusamba, Culik, Lovina and others are well known for their fresh seafood cooking. The places were from generation to generation live as fishermen. In the past fresh seafood cooking was not so popular to all Balinese except salted fish which was due to the duration of the fish and the technique of preserving fresh seafood was not yet available. Villages such as Pengambengan on West Bali, Jimbaran central Bali, Kusamba and Culik East Bali, Lovina on North Bali are suppliers of salted fish for all Balinese, beside the production from 3 lakes and local farmers who grow fish on special fish ponds managed traditionally.
Until today 2 places are well known for their fresh seafood cooking that are Jimbaran including Kedonganan and Kusamba. After the Bali become popular as tourist destination both places develop more and more in the cooking of fresh seafood compared to as suppliers of salted fish. As a result the market prices of salted fish become very expensive on the island due to decreasing numbers of salted fish production, and more depending on supplies from other islands such as Java and south Sulawesi. While production of salted fish are freely available on the island of Sumatra and east Indonesia, but the transportation costs resulting also the market prices after dropping in Bali still very high.
Fresh seafood such as those offered by restaurants at Jimbaran and Kedonganan bay are mostly barbeque and some are fried cooking. Fish is only splitted into 2 parts, so one can still see complete shape of it on dish that is ready to be enjoyed with arising tastes presentation. Some cooking also presented in the form of what is called pesan, the fish is sliced into some parts not so small pieces given flavors and wrapped in coconutleaves before cooked on hot vapors. Most of the flavor used are lemon grass, lemon, chilli, pepper, onion, garlic, curcuma, ccoconut meals, and many others according to the preferences of the chefs, and what is favorites at the time.
Fresh seafood now not only popular at Jimbaran and Kedonganan, but also within the city of Denpasar, and far inner part of Bali one can find the same quality of cooking with almost the same prices. In Denpasar city for example there are many restaurants serving this special cooking from a small warungs or food stalls to big with dozens of seat restaurants. One place now known to have many good seafood restaurant within the cty of Denpasar is Peguyangan, a place at north Denpasar.
